Ingredients:

  • 1 ¼ cup instant oats
  • 1 ¼ cup crispy rice cereal 
  • 1/3 cup peanut butter
  • 1/3 cup honey
  • 2Tbs coconut oil or butter 
  • ½ tsp vanilla extract 
  • ¼ cup chocolate chips 
  • ¼ cup sprinkles


  1. Line a muffin tin with silicone liners or 8x8 baking dish with parchment paper 
  2. In a medium bowl add in instant oats and crispy rice cereal
  3. In a microwave-safe bowl or measuring cup add in the peanut butter, coconut oil and honey. Heat for 1 minute, stir and hear for additional 45 seconds. Add in vanilla extract and allow to cool for 2-3 minutes
  4. Pour the PB and honey into the oats and stir 
  5. Gently fold in chocolate chips and sprinkles 
  6. Spoon granola mixture evenly into silicone liners, press down with spoon to pack 
  7. Place in refrigerator for at least 1 hour to chill 
  8. Alternative mix-in ideas:
  • ​Craisins and white chocolate chips 
  • Chocolate chips and shredded coconut 
  • Dried cherries and almond slivers 
  • Raisins and ½ tsp cinnamon 
  • Free dried strawberries and yogurt chips 
  • Mini marshmallows and mini chocolate chips  



  1. Drain, rinse, and peel chickpeas (Great job for little helpers!)
  2. Preheat oven to 375 degrees F
  3. Line baking sheet with silpat or parchment paper
  4. Spread evenly in single layer on baking sheet
  5. Bake for 45 minutes or until crispy
  6. While still warm toss chickpeas in bowl with olive oil, honey and cinnamon to taste
  7. Spread back on baking sheet and cook additional 10 minutes to caramelize

  1. Core and slice apples into shape of flat “donuts”
  2. Top with spread of choice, ie: cream cheese, Nutella, peanut butter, ricotta etc
  3. Add toppings: raisins, sprinkles, honey, nuts, sliced fruit, chocolate chips, coconut flakes etc. 

Healthy Snack Recipes (from Session 4)



  1. Add 1/3 cup popcorn to brown paper bag
  2. Fold back over several times at the top 
  3. Microwave on high until 1-2 seconds gap between popping (about 2-3 minutes)
  4. Top as desired 



  1. Slice Cheese into desired shapes 
  2. Lay on silpat mat or parchment paper
  3. Season as desired (I use a sprinkle of Tony’s seasoning and garlic pepper)
  4. Bake at 325F for 20 minutes or until desired crispness (Watch closely!)
